Small suggestions are: use self-raising flour and let it rest for 5 to 10 minutes before frying; add different flavours to it if you feel adventurous, such as cinnamon or something savoury.

Ingredients
- 125g flour
- 1½ tsp baking powder
- 1 egg
- 300ml milk
- butter , for frying
- 1 tbsp golden caster sugar
- 4 bananas
- maple syrup , to serve
Method
- Put the flour, baking powder, egg, milk and sugar in a large jug then whiz with a hand-held blender until smooth (or just whisk together in a bowl).
- Heat a non-stick frying pan (add a little butter if you need) and pour in small amounts of batter. Once the top of the pancake has bubbled and set, flip with a palette knife and cook on the other side. Repeat until all the batter is used.
- Stack the pancakes in a pile, slice the bananas and add to the plate. Drizzle with maple syrup and serve with Greek yoghurt or vanilla ice cream and extra maple syrup.
